Ingredients

1 cup Seedless Dates (about 20–25 dates)

2 tbsp Ghee (clarified butter)

¼ cup Almonds, chopped

¼ cup Cashews, chopped

2 tbsp Pistachios, chopped

2 tbsp Walnuts, chopped

1 tbsp Raisins (optional)

1 tsp Poppy Seeds or Sesame Seeds (optional, for coating)
Instructions

Prep the Dates:
Remove seeds from the dates if not already done. Roughly chop them. -
Roast the Dry Fruits:
In a pan, heat 1 tbsp ghee. Add chopped almonds, cashews, pistachios, and walnuts. Roast on low flame for 2–3 minutes till golden. Remove and set aside. -
Cook the Dates:
In the same pan, add 1 tbsp ghee and the chopped dates. Cook on low heat until soft and mushy (about 4–5 minutes). Mash them with a spatula while cooking. -
Combine & Mix:
Add roasted dry fruits to the soft dates. Mix well and cook for 1–2 minutes. Turn off the flame. -
Shape the Roll:
Transfer the warm mixture to a parchment paper or foil. Shape into a log. Roll it tightly and twist the ends. Let it set for 20–30 minutes at room temperature (or chill for faster setting). -
Slice & Serve:
Once firm, cut into ½ inch thick pieces. Optionally, roll sides in poppy seeds or sesame seeds for extra texture.
Storage:
Keep in an airtight container. Stays fresh for up to 10 days at room temperature or 2 weeks in the fridge.
