Asian Cucumber Salad Recipe: Crunchy, Spicy, Sweet Side Dish You Can Make in 10 Minutes

Asian Cucumber Salad

Introduction

This Asian Cucumber Salad is the ultimate refreshing side dish that perfectly balances crunch and flavor. With cool strips of English cucumber tossed in a nutty, spicy, and slightly sweet garlic-infused dressing, it’s a quick and easy recipe that brings a burst of zest to any meal. Whether you need a light snack or a vibrant accompaniment to your main course, this salad delivers a satisfying crispness in every bite!

Ingredients

English cucumber – 2, thinly sliced

Roasted peanuts – crushed

Toasted sesame seeds – 1 tbsp

Garlic – 1 tsp, chopped

Chili flakes – ½ tsp

Salt – as per taste

Olive oil – 2 tbsp (for tempering)

Lemon juice – 1 tbsp

Honey – 1 tsp

Method

  1. Prep the Cucumbers: Wash and slice the 2 English cucumbers into thin strips or batons. Place them in a large mixing bowl.
  2. Add Crunch: Dry roast the sesame seeds in a pan until golden. Add the crushed roasted peanuts and the toasted sesame seeds to the bowl with the cucumbers.
  3. Prepare the Tempering Base: In a separate small heat-proof bowl, combine the chopped garlic, chili flakes, salt, and honey.
  4. Temper the Spices: Heat the 2 tbsp of olive oil until hot, then carefully pour it over the garlic and spice mixture to release their aromas.
  5. Finish the Dressing: Add the 1 tbsp of lemon juice to the tempered oil mixture and stir well to combine all the flavors.
  6. Combine & Serve: Pour the warm dressing over the cucumbers, peanuts, and sesame seeds. Toss everything together thoroughly until the cucumbers are well-coated. Enjoy your crunchy, flavorful salad immediately!

Tip for the Best Result

Serve Immediately: Cucumbers have a high water content and will start to release liquid once they come into contact with the salt in the dressing. For the crunchiest texture and best flavor, toss the salad with the dressing just before serving. If you need to prep ahead, keep the cut cucumbers and the dressing in separate containers and mix them right at the table!
