Crispy Broccoli & Cheese Patties

These broccoli and cheese patties are a nutritious, kid-friendly snack designed to sneak vegetables into your diet in a delicious way. Packed with fiber and flavor, they can be served as a standalone snack with tea or coffee, or used as a wholesome filling for burger buns.


Ingredients

Base:

  • 250g Broccoli (cut into florets, stalks included)
  • 1/2 Capsicum (finely chopped)
  • 1 Potato (boiled and grated)

Binders & Spices:

  • Bread crumbs
  • 2 tbsp Roasted Gram Flour (Besan)
  • Fresh Coriander leaves
  • 1 tsp Ginger-Chili paste
  • 1/2 tsp Cumin seed powder
  • 1/2 tsp Red chili powder
  • Salt (to taste)

Filling & Frying:

  • Cheese (finely chopped or grated) 
  • Oil (for shallow frying)

Method of Making

  1. Process the Greens: Finely chop or grind the broccoli florets and stalks using a chopper or blender until they turn into small crumbles.
  2. Remove Moisture: In a pan, add the crumbled broccoli and chopped capsicum. Dry roast them (without oil) for 2–3 minutes until the moisture evaporates and the mixture shrinks. Remove from heat and let it cool completely.
  3. Prepare the Dough: In a mixing bowl, combine the cooled broccoli mixture with the boiled potato, bread crumbs, roasted gram flour, coriander, ginger-chili paste, cumin powder, red chili powder, and salt. Mix well to form a dough.
  4. Stuff and Shape: Take a small portion of the dough (approx. 2 inches), flatten it in your palm, and place some chopped cheese in the center. Seal the edges to cover the cheese and flatten it again into a patty shape.
  5. Cook: Heat a small amount of oil in a pan. Place the patties in the pan and cook on both sides until they are golden brown and crispy.

Tips for the Best Result

    • Dry Roast Essential: Do not skip dry roasting the broccoli and capsicum; removing the water content ensures the patties are crispy rather than soggy.
    • Cooling is Key: Allow the roasted vegetables to cool down fully before adding the binding ingredients (potato/flour) to keep the mixture firm and workable.
    • Smooth Finish: After shaping the patty, roll the edges gently on a flat plate to smooth them out for a neat, professional look.
    • Avoid Cheese: To reduce the calories avoid cheese in the recipe
